Fix: Restore Item-Tag Many-to-Many Relationship in API Responses (#197)

fix: restore Item-Tag many-to-many relationship in API responses

- Add tags to Item model's \ array for automatic eager loading
- Update IndexTest to expect correct JSON structure with tags
- Fix missing tags in Item API responses
- All 924 tests passing (3601 assertions)
